BBQ Pizza
1 lb ground beef or ground turkey 1 small can of corn drained 1/2 cup chopped green pepper 3 green onions chopped 1 tbsp minced garlic 3/4 cup BBQ sauce Co Jack cheese Boboli or Mama Mary's pizza crust Brown meat in skillet w/garlic, drain. Add corn, green pepper, green onions, and BBQ sauce. Mix together. Put on top of crust, add cheese. Bake at 400 for 10 min. or until cheese is melted.

Tex Mex Mac
1 lb lean ground beef or ground turkey
2 cups water
1 cup taco bell thick and chunky salsa
1 pkg (14 oz) kraft deluxe macaroni and cheese dinner
2 cups frozen corn
1/2 cup kraft mexican style cheese
1 green onion

Brown meat in skillet ; drain, return to skillet. Stir in water, salsa, and macaroni. Bring to a boil. Reduce heat to low; cover

Simmer 10 min or until macaroni is tender, stirring twice. Add corn and cheese sauce mix; Cook 2min or until heated through and blended. Ladle into bowls. Sprinkle with shredded cheese and green onion.

Kielbasa Skillet
This one takes a little time, but is so worth it!! Everyone in my family gave this one 5 stars!!!

1 lb. red potatoes cubed
3 tbsp water
3/4 lb. smoked kielbasa cut into 1/4 in. slices
1/2 cup chopped onion
1 tbsp olive oil
2 tbsp brown sugar
2 tbsp cider vinegar
1 tbsp mustard
1/2 tsp dried thyme
1/4 tsp pepper
4 cups fresh baby spinach
5 bacon strips, cooked and crumbled

Place potatoes and water in a microwave safe dish. Cover and microwave on high for 4 minutes or until tender.

In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.

Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted.

Baked Tilapia
4 tilapia fillets
3 tblsp butter, melted
3 tblsp lemon juice
1 1/2 tsp garlic powder
1/8 tsp salt
2 tblsp capers , drained
1/2 tsp oregano dried
1/8 tsp paprika


Place tilapia in an ungreased 13 in x 9 in baking dish. In a small bowl, combine the butter, lemon juice, garlic powder and salt. Pour over the fillets. Sprinkle with the capers, oregano, and paprika. Bake, uncovered at 425 for 10-15 min. or until fish flakes easily with a fork.

Taco Dinner Skillet
Try this great dinner. It’s quick and easy, and the whole family loved it!!!

INGREDIENTS:

1 lb extra lean ground beef or ground turkey
1 small onion
¼ cup green onion
1tbsp chili powder
1 cup fat free reduced sodium chicken broth
1 cup water
2 cups instant white rice, uncooked
½ cup cheez whiz
Shredded lettuce
1 tomato
Sour cream

DIRECTIONS:

Brown meat, onion, and green pepper in large skillet Add chili powder, broth, and water, stir, bring to a boil Stir in rice and cheez whiz; cover. Simmer on low heat 5 min. stirring occasionally. Top with lettuce and tomato, and serve with sour cream.
